NoriPop food preparation

Our story

From Hong Kong to Edmonton.

NoriPop was founded by two sisters who grew up in Hong Kong and brought their passion for food to Edmonton.

How It Started

Growing up in Hong Kong, sisters Peggy and Joyce shared a love for food and a belief that great meals bring people together.

After moving to Edmonton, they saw an opportunity to introduce something they loved but felt was missing from the local food scene. Combining Peggy's background in Japanese cuisine with Joyce's passion for flavour and creativity, they set out to create their own take on the sushi taco.

Inspired by Japanese ingredients, quality seafood, and street food culture, they spent countless nights testing recipes, refining sauces, and perfecting every detail. Their goal was never to reinvent sushi or tacos. Instead, they wanted to bring a fun, flavourful food experience to Edmonton while staying true to the quality and attention to detail they believed good food deserves.

When NoriPop made its debut at Edmonton's Ignite Market, the response exceeded every expectation. Over three days, more than 1,500 NoriPop were sold, and the team completely sold out.

What started as a small family project quickly grew into something much bigger, driven by a simple mission: serving great food that people are excited to share with family and friends.

What we stand for

The NoriPop way

Unapologetically fusion

We don't pick sides. Japanese technique, Mexican soul, Edmonton heart — all of it, every taco.

Sushi-grade, always

We source the same quality fish you'd find at a proper sushi bar. Street food prices, no shortcuts.

Made fresh, every market

Nothing is pre-made. Every taco is assembled to order at the stand. That's the only way we know how.

Community first

Farmer's markets are our home. We love Edmonton's food community and we're proud to be part of it.
